Peking Pork Chops

Ingredients
500g pork, 3큰술 cornstarch, 1큰술 oyster sauce, 1큰술 cooking wine, 2큰술 water, 0.5작은술 white pepper, 0.5작은술 salt, 0.5컵 flour, 1작은술 baking powder, 2큰술 red vinegar, 1큰술 rice vinegar, 3큰술 ketchup, 1큰술 hoisin sauce, 2큰술 sugar, 1큰술 sesame seeds, 500ml oil for frying
Instructions
1. Cut the pork into 1/2-inch thick slices.
2. Tenderize the pork by pounding with the back of a cleaver.
3. For the marinade, mix together cornstarch, oyster sauce, cooking wine, water, white pepper, and salt.
4. Add the pork to the marinade and mix by hand.
5. For the frying batter, add flour, cornstarch, baking powder, and salt to a bowl. Then add water until the desired consistency is reached.
6. Mix the batter with the pork.
7. Fry the pork until golden brown.
8. Do a second fry at a higher temperature to get the pork extra crispy.
9. Pour out the oil from the wok.
10. Cook the sweet and sour sauce (red vinegar, rice vinegar, ketchup, hoisin sauce, sugar, and water) and thicken it with a potato starch slurry.
11. Add the fried pork to the sauce and mix.
12. Plate the Peking Pork Chops, sprinkle on some sesame seeds, and serve.
