Chinese Chili Sauce

1oz garlic, 5oz Fresno peppers, 2개 zi tin ziu (facing heaven peppers), 3tbsp cooking oil, 1tsp vinegar, 1tsp sugar, 1tsp salt, 1tbsp ground bean sauce
Instructions
1. Smash the garlic, cut off the ends, and mince it. You can use a blender, but hand-chopping gives a different texture.
2. Cut off the stems of the chili peppers, cut them open lengthwise, remove the core, then slice into strips and mince them. You can use a blender, but be careful not to overdo it to avoid a liquidy consistency. Wear gloves if preferred.
3. Set the diced chilis aside in a plate or bowl.
4. Heat a wok on high heat until hot, then turn the heat down.
5. Add 3 tbsp of cooking oil to the wok and heat it to about 250°F (121°C). Test the temperature with a piece of chili; if it's too hot, add some cold oil to cool it down.
6. Add the minced garlic to the oil and continuously move it around with a spatula until fragrant. Be careful not to burn it.
7. Once the garlic is fragrant, add the chili peppers. Turn the heat down to medium and slowly cook, flipping carefully, for about 1 minute. This process will bring out the chili oil and flavor.
8. Turn the heat to low and continue stirring the chilis for about 2 minutes until the oil turns red and you can smell the flavors.
9. Add 1 tsp of vinegar, 1 tsp of sugar, and 1 tsp of salt. Mix well.
10. Add 1 tbsp of ground bean sauce and mix it in to add a deeper umami flavor.
