Jianbing

2cup milk, 2cup water, 1tsp salt, 4cup all-purpose flour, 5개 large eggs, 0.25cup Doubanjiang (bean paste), 0.25cup hoisin sauce, 1Tbsp toasted sesame oil, 1Tbsp water, 1Tbsp chili crisp (Laoganma recommended), 1pinch Chinese-inspired spice mix, 1개 English cucumber, 1bunch cilantro, 1bunch green onions, 50g pickled mustard root (zha cai), 2links Chinese sausage (lap cheong)
Instructions
1. Combine two cups of milk (2% or whole) and two cups of water in a bowl.
2. Add 1 tsp of salt to the liquid mixture for base flavor.
3. Slowly integrate four cups of all-purpose flour into the liquid, mixing to avoid lumps. Aim for a slightly thicker consistency than heavy cream, but looser than pancake batter.
4. Blend the base batter (without eggs) for under 2 minutes to remove all chunks and achieve smoothness.
5. Add five large eggs to the blended batter and integrate them until the batter becomes more loose, resembling the consistency of heavy cream or half-and-half.
6. Cover the finished crepe batter and refrigerate.
7. Prepare the Jianbing sauce by combining a quarter cup of Doubanjiang (bean paste) and a quarter cup of hoisin sauce.
8. Add 1 Tbsp (15 ml) of toasted sesame oil and 1 Tbsp (15 ml) of water to the sauce mixture.
9. Stir in 1 Tbsp of chili crisp, preferably Laoganma, to the sauce. Adjust the amount to your preferred spice level.
10. Optionally, add a pinch of Chinese-inspired spice mix to the sauce for extra flavor.
11. Cut English cucumbers on a bias about a quarter-inch thick, then cut them again into julienne strips (like fries).
12. Coarsely chop cilantro.
13. Chop green onions to be in between paper-thin and coarse, so they have a slight bite but are still small.
14. Prepare the pickled mustard root (zha cai); it does not need chopping. This adds a crunchy, umami, slightly pickled flavor.
15. Cut two links of Chinese sausage (lap cheong) on a bias and sauté them in a pan until cooked.
