Halumi Skewers

2cloves garlic, 1to_taste lemon, 2to_taste peaches, 4tablespoons extra virgin olive oil, 1pinch pepper, 1pinch oregano, 250g halumi, 4slices bread, 10g parsley, 20g pistachio nuts
Instructions
1. Grate two cloves of garlic into a large bowl for the marinade base.
2. Zest one lemon into the bowl, avoiding the white pith.
3. Carefully cut two ripe peaches into quarters, removing the stone. Grate one quarter of a peach into the marinade to create a glaze.
4. Add four tablespoons of extra virgin olive oil and the juice of one lemon to the bowl, catching any pips. Season with pepper and a pinch of oregano. Mix well.
5. Cut the halumi into four nice chunks. Score the halumi about half a centimeter deep in a criss-cross pattern on both sides to achieve texture. Cut each chunk into 6 pieces.
6. Cut bread into chunks of the same size as the peaches and halumi.
7. Add the halumi and bread chunks to the marinade, ensuring they are well coated.
8. Assemble the skewers, alternating between bread, peach, and halumi, aiming for a harmonious size.
9. Grill the skewers on a medium-low barbecue, turning them until golden and the peaches are nicely charred.
10. Serve the skewers, garnished with parsley leaves, a drizzle of lemon juice, and crushed pistachio nuts.
