The Chemistry of Better Ground Meat

2lb Ground Beef (85% lean), 0.75tsp Baking Soda, 2tbsp Water, 1.5tsp Table Salt, 1cup Onions, 2cloves Garlic, 1bowl Spice Blend (toasted ancho chilies, tortilla chips, herbs, spices), 1tbsp Chipotles in Adobo, 2cups Water, 1can Pinto Beans, 1tsp Sugar, 1can Tomato, 8oz Ground Turkey, 1tsp Soy Sauce, 1tbsp Melted Butter, 2tbsp Panko Breadcrumbs, 1tbsp Parmesan Cheese, 0.5tsp Gelatin, 0.5tsp Black Pepper, 2slices Cheese Slices, 2leaves Lettuce, 2slices Tomato Slices, 2buns Burger Buns, 2tbsp Special Sauce
Instructions
1. In a bowl, combine 2 tablespoons of water, 3/4 teaspoon of baking soda, and 1 1/2 teaspoons of table salt. Mix well until dissolved.
2. Add 2 pounds of 85% lean ground beef to the baking soda solution. Gently mix the beef, ensuring as much of it comes into contact with the solution as possible without squishing the meat.
3. In a pot, cook 1 cup of diced onions and 2 cloves of minced garlic until translucent.
4. Add the treated ground beef to the pot with the aromatics. Break the beef down into approximately 1/4-inch pieces to maximize surface area for browning. Cook until nicely browned and a fond forms on the bottom and sides of the pot.
5. Add the spice blend and chipotles in adobo to the pot. Toast for 1-2 minutes until fragrant.
6. Stir in 2 cups of water, 1 can of pinto beans, 1 teaspoon of sugar, and 1 can of tomato. Bring to a boil, scraping up all the fond from the bottom and sides of the pot.
7. Once boiling, reduce heat, cover the pot, and transfer to a 275°F oven for 90 minutes to gently simmer.
8. Serve the chili with desired toppings such as shredded cheese, avocado, red onion, sour cream, cilantro, and tortilla chips.
9. For turkey burgers, in a bowl, combine 1/8 teaspoon of baking soda and 1 teaspoon of water. Mix well.
10. Break 8 ounces of ground turkey into small 1/2-inch pieces and drop them into the bowl. Drizzle the soda solution over the turkey.
11. Add 1 teaspoon of soy sauce, 1 tablespoon of melted butter, 2 tablespoons of panko breadcrumbs, 1 tablespoon of Parmesan cheese, 1/2 teaspoon of gelatin, 1/2 teaspoon of salt, and 1/2 teaspoon of pepper to the turkey. Lightly toss to combine without overworking the meat.
12. Divide the turkey mixture in half and shape each into a 4-inch patty. Place the patties into a cold non-stick skillet.
13. Cook the patties over medium heat. Once sizzling begins, cover the skillet with a lid and cook for 2 1/2 to 3 minutes per side, or until the internal temperature reaches 160°F and they are nicely browned.
14. If adding cheese, place a slice on each patty during the last minute of cooking.
15. Assemble the turkey burgers with lettuce, tomato, and special sauce on burger buns.
