How to Make Brown Butter

Instructions
1. Cube the unsalted butter into small pieces to ensure even browning.
2. Place the cubed butter in a light-colored pan over medium heat. Stir continuously with a wooden spoon as the butter melts.
3. As the butter heats up, you will hear gurgling and see foam develop. Continue stirring, moving the foam aside to monitor the color of the milk solids below.
4. Continue cooking and stirring until the butter turns a beautiful golden amber color and smells nutty. The milk solids at the bottom will also darken.
5. Immediately transfer the brown butter to a heatproof bowl to stop the cooking process. Scrape out all the browned milk solids from the bottom of the pan, as they contain most of the flavor.
6. Once cooled, the brown butter can be used in recipes that call for melted butter. For frostings or pastries requiring cold butter, chill it until softened or freeze and cut into pieces.
