Richard's Asian Turkey Burger with Sriracha Slaw

400g Ground turkey, 1tbsp Sesame oil, 1tbsp Fish sauce, 1pinch Kosher salt, 1pinch Black pepper, 2stalks Scallions, 2cloves Garlic, 10g Ginger, 1tbsp Grapeseed oil, 30g Butter, 2pcs Sesame seed buns, 100g Red cabbage, 100g Napa cabbage, 0.5pcs Green apple, 2tbsp Mayonnaise, 0.5pcs Lime, 1tbsp Sriracha sauce, 10g Cilantro
Instructions
1. Season ground turkey with sesame oil, fish sauce, salt, black pepper, chopped scallions, grated ginger, and grated garlic, then mix well.
2. Form the turkey mixture into patties that are wider than the buns and about half an inch thick.
3. Poke holes inside the turkey patties with a knife to prevent them from shrinking too much.
4. Heat cooking oil in a skillet, then add the turkey patties and cook over medium heat.
5. Flip the turkey burger and add smashed garlic, ginger, and butter to baste the patty.
6. Prepare the sriracha slaw by mixing sriracha, mayonnaise, lime juice, shredded red cabbage, napa cabbage, and sliced green apple in a bowl.
7. Assemble the burger by placing a bed of cilantro on the bottom bun, followed by the cooked turkey burger and a generous amount of sriracha slaw, then serve open-faced.
