Lentil Tacos

Ingredients
200g dry lentils, 1개 small onion, 1개 small red bell pepper, 11oz can of corn, 4oz can of chopped green chilies, 1.25oz taco seasoning packet, 0.5컵 sour cream, 1개 lime, 1glug olive oil, 1꼬집 salt, 1컵 water, 8개 medium tortillas
Instructions
1. Rinse the lentils and boil them in a large pot of water until tender, about 15 minutes for green lentils. Drain them.
2. Prepare the crema by squeezing half a lime into about a quarter cup of sour cream. Add a little water to loosen it to a sauce consistency and a pinch of salt. Mix well.
3. Chop the onion into small pieces.
4. Cut the red bell pepper in half, scoop out seeds and stem, then cut into strips and dice.
5. Heat a glug of olive oil in a large pan over medium heat. Add the chopped onions and cook for about 2 minutes until softened.
6. Add the chopped bell peppers to the pan and cook for at least 5 more minutes until almost soft.
7. Drain the can of corn and add it to the vegetables in the pan. Also add the 4-ounce can of diced green chilies.
8. Add the drained lentils to the pan with the vegetables. Stir in the 1 and 1/4 ounce packet of taco seasoning. If the mixture seems too dry, add a little water.
9. Heat the tortillas. You can steam them or broil them for about a minute until warm and pliable.
10. Assemble the tacos: place lentils on a tortilla, then drizzle with the prepared crema.
