Hawaiian Garlic Shrimp Scampi

1head garlic, 4tablespoons butter, 1pound shrimp (fully thawed, deveined, shell on), 2tablespoons rice flour, 1tablespoon paprika, 1teaspoon cayenne, 1pinch salt, 3tablespoons olive oil, 1개 lemon, 1serving white rice
Instructions
1. Peel an entire head of garlic by separating cloves into one bowl, placing another bowl over the top, and shaking for about 30 seconds until peels are knocked off. If desired, add a little cold water to easily grab the cloves.
2. Chop about 8-10 nicely peeled garlic cloves. Do not mince; aim for consistently sized pieces, not super small, as they will be toasted in butter.
3. Melt 4 tablespoons of butter over medium heat. Once the butter melts and starts to foam, stir in the chopped garlic.
4. Cook the garlic in butter over medium heat, stirring occasionally, until it turns a beautiful golden brown. Pay close attention to prevent burning. Remove from heat once golden brown, as it will continue to toast slightly.
5. Transfer the toasted garlic and butter into a bowl and reserve it for later.
6. Ensure 1 pound of fully thawed, deveined, shell-on shrimp are as dry as possible by draining them well and patting them dry with paper towels.
7. Prepare the spicy coating by combining 2 tablespoons of rice flour (or regular flour), 1 tablespoon of paprika, 1 teaspoon of cayenne, and some salt in a bowl. Mix well.
8. Sprinkle the coating mixture generously over the dried shrimp and mix until every shrimp is thoroughly and evenly coated.
9. Heat a few tablespoons of olive oil in a nonstick pan over medium-high heat. Cook the shrimp in a single layer (the 'Beyonce method') to avoid crowding. If cooking the whole batch, use a larger pan or cook in batches.
10. Cook the first side of the shrimp for about 2 minutes, then flip and cook the other side for about the same amount of time. Adjust cooking time based on the size of your shrimp.
11. Once the shrimp are beautifully cooked on both sides, toss in the reserved toasted garlic and butter. Stir everything together and cook for about 30 seconds.
12. Serve the Hawaiian Garlic Shrimp Scampi immediately over white rice, alongside fresh lemon. Spoon plenty of the toasted garlic and butter over the top.
