Crispy Onion Rings

150g regular flour, 50g cornstarch, 20g instant mashed potatoes, 1pinch cayenne, 200ml club soda, 150g panko breadcrumbs, 2medium yellow onions, 500ml olive oil, 5g fine sea salt
Instructions
1. Whisk together the regular flour, cornstarch, instant mashed potatoes, and cayenne in a bowl.
2. Gradually add club soda to the dry ingredients, stirring until just combined. The batter will thicken as it sits due to the instant mashed potatoes.
3. Pour panko breadcrumbs into a shallow pan.
4. Slice medium yellow onions into quarter-inch thick rings and separate them.
5. Dip a few onion rings at a time into the batter, ensuring they are fully coated. Let excess batter drip off.
6. Transfer the battered onion rings to the pan with panko breadcrumbs, pressing gently to ensure the crumbs adhere.
7. Heat olive oil (or any standard vegetable frying oil) in a deep pan to 350°F (175°C).
8. Fry the onion rings in batches for about 2.5 to 3 minutes, or until golden brown and crispy.
9. Remove the fried onion rings and place them on a rack to drain excess oil. Immediately salt generously with fine sea salt before serving.
