Amaretti cookies

500g almond meal, 5개 egg whites, 300g caster sugar, 2tsp vanilla extract, 100g icing sugar, 50ml water
Instructions
1. Break the eggs and separate the whites from the yolks. Keep the yolks for other uses.
2. In a large bowl, combine the almond meal and caster sugar. Mix them well using a spoon or your hands.
3. Whisk the egg whites until they form a meringue-like consistency. You can use a hand mixer if preferred. Optionally, add a little icing sugar to help achieve the meringue texture.
4. Add 2 teaspoons of vanilla extract to the whisked egg whites and mix.
5. Gently fold the meringue (egg white mixture) into the almond meal and sugar mixture. Mix until all ingredients are well combined and the dough is soft but firm.
6. Wash your hands and wet your palms with water. Use a teaspoon to scoop out portions of the dough and roll them into balls. Slightly squash them.
7. Place the shaped amaretti into a bowl of icing sugar. Roll them around to ensure they are completely covered with icing sugar.
8. Place the sugar-coated amaretti on a baking tray, leaving space between them as they will expand in the oven.
9. Gently press down on each amaretti with one or two fingers. Do not press too hard to avoid breaking them.
10. Bake in a fan-forced oven at 180°C for 15 minutes. Check at 12 minutes; if they have a golden brownish color, they are ready. The chef baked for an additional 2 minutes for a total of 14 minutes.
11. Once baked, let the amaretti cool for at least 5 minutes on the tray before moving them to a plate, as they are soft when hot.
12. Optionally, dust with more icing sugar before serving.
