Instructions
1. Combine brown sugar, rice wine vinegar, fish sauce, soy sauce, roasted sesame seed oil, minced garlic, minced ginger, and Gochujang in a pan. Cook until the sauce thickens.
2. Season ground beef with pepper and salt. Mix well.
3. Form the seasoned beef into patties about a centimeter thick. Place mozzarella cheese in the center of one patty and cover with another, sealing the edges tightly.
4. Heat a hot pan with a touch of oil. Place the burger patty in the pan and lightly press it.
5. Add a couple of knobs of butter to the pan while the burger cooks.
6. Prepare the Asian slaw by finely slicing carrots and cabbage. Combine with kimchi, scallions, salt, pepper, and sesame seeds.
7. Add three tablespoons of mayonnaise and some of the prepared sauce to the slaw mixture. Mix thoroughly.
8. Flip the burger and continue cooking until done. Remove from pan and let it rest.
9. Toast the brioche buns in the pan, soaking up the remaining flavors and butter.
10. Assemble the burger: spread slaw on the bottom bun, add a touch of the sauce, place the burger patty, top with more slaw, and cover with the top bun.
