0.75cup dark brown sugar, 0.75cup white sugar, 0.25cup garlic powder, 0.5cup sweet American paprika, 2Tbsp ground ginger, 2Tbsp onion powder, 2tsp rosemary powder, 2tsp black pepper, 3kg pork picnic, 3Tbsp kosher salt, 1.5cup white distilled vinegar, 1Tbsp salt, 2tsp crushed red pepper, 2Tbsp hot sauce, 0.5cup Kansas City style sauce, 0.5cup Alabama style sauce
Instructions
1. Prepare the Memphis dust by combining dark brown sugar, white sugar, garlic powder, sweet American paprika, ground ginger, onion powder, and rosemary powder.
2. Remove any large pieces of excess fat from the pork picnic.
3. Generously coat the pork on all sides and surfaces with kosher salt and freshly ground black pepper.
4. Apply a generous rub down with the prepared Memphis dust to the pork.
5. Combine white distilled vinegar, salt, crushed red pepper, sugar, and hot sauce to create the mop sauce.
6. Transfer the pork to a smoker and smoke for 16 hours.
7. After smoking, let the pork rest under cover of foil for about 45 minutes.
8. Pull the pork apart.
9. Toss a portion of the pulled pork with the vinegar mop sauce.
10. Squirt Kansas City style sauce onto another portion of the pulled pork with the Memphis dry rub.
11. Add Alabama style sauce to the remaining portion of pulled pork.
