Oven Fried Buffalo Wings

2pounds air chilled chicken wings, 2teaspoons kosher salt, 2teaspoons corn starch, 1teaspoon baking powder, 2tablespoons neutral oil (canola/vegetable), 4tablespoons butter, 0to taste Frank's Hot Sauce, 3cloves garlic
Instructions
1. Start with air-chilled chicken wings if possible, as they tend to have drier skin. Pat the chicken wings dry with paper towels.
2. Transfer the chicken wings to a bowl. For every pound of chicken wings, add 1 teaspoon of kosher salt, 1 teaspoon of corn starch, and 1/2 teaspoon of baking powder. For 2 pounds of wings, use 2 teaspoons of kosher salt, 2 teaspoons of corn starch, and 1 teaspoon of baking powder.
3. Place the seasoned wings on a wire rack set over a tray. Refrigerate uncovered overnight on the bottom shelf of the fridge to allow the surface to dry out.
4. The next day, transfer the dried wings to a bowl and toss them with a couple of tablespoons of neutral oil (like canola or vegetable oil).
5. Arrange the wings back on the wire rack, ensuring the side with the most skin is facing up. Stretch out any pulled-back skin on drumettes to cover the meat.
6. Preheat your oven to 450 degrees Fahrenheit (232 degrees Celsius) on convection if available. Bake the wings for about 20 minutes.
7. While the chicken bakes, prepare the sauce. Melt 4 tablespoons of butter in a skillet. Add 3 cloves of minced garlic and Frank's Hot Sauce (or Crystal hot sauce) to taste.
