General Tso's Chicken

2pounds boneless chicken leg, thigh, and drumstick, 1.5tsp salt, 0.75tsp black pepper, 2tsp soy sauce, 1egg egg yolk, 0.66cups corn starch, 0.66cups all-purpose flour, 2cups high smoke point oil, 4.5tbsp sugar, 2.5tbsp Chinese black vinegar, 3.5tbsp water, 5pieces dried hot chilies, 1clove garlic, 1piece ginger, 0.5tsp sesame seeds, 1sprig cilantro
Instructions
1. Roughly cut the chicken into big chunks, then marinate with salt, black pepper, soy sauce, and egg yolk. Cover and let it sit for about 15 minutes.
2. Combine corn starch and all-purpose flour together. Coat the chicken pieces with the flour mixture and shake off excess flour.
3. Heat oil to 350 degrees Fahrenheit. Fry the chicken in batches for 4 to 5 minutes until the outside layers are slightly golden and crispy, then take them out and let them rest.
4. Heat oil to 370 degrees Fahrenheit and double fry the chicken for a minute or two until beautifully golden brown. Take them out.
5. Prepare the sauce by combining sugar, a small amount of corn starch, Chinese black vinegar, soy sauce, and water.
6. Heat up wok with a little oil, sauté grated garlic, grated ginger, and dried hot chilies on low heat until slightly smoky.
7. Pour in the sauce and cook on medium heat until it becomes a thin syrup texture. Add the chicken, toss until coated, garnish with sesame seeds and cilantro, and serve.
