Day-Old Rice Mimicry for Fried Rice

2cups white rice, 1tbsp vegetable oil, 2.66cups water
Instructions
1. Rinse the rice to remove any surface starch, which helps prevent the grains from sticking together.
2. Quickly toast the rinsed rice in vegetable oil. The oil coats each rice grain, keeping them separate and giving them a slightly firmer texture from the start.
3. Cook the rice as usual, but with a little less water. For 2 cups of rice, use 2 and 2/3 cups of water. Less water means the grains don't get overly hydrated, staying firm rather than soft or sticky.
4. When the rice is ready, spread it out on a sheet pan so it can cool quickly.
5. Refrigerate the rice for about 20 minutes. Chilling speeds up evaporation and dries out the rice's surface, preparing it for fried rice.
