Stir-fried Glass Noodles with Minced Pork

0.5lb Glass Noodles, 2cloves Garlic, 1tsp Ginger, 2pieces Red & Green Chilies, 2tbsp Cooking Oil, 1tbsp Sichuan Dou Ban Jiang, 1tbsp Oyster Sauce, 7oz Ground Pork, 1.5tbsp Soy Sauce, 2.5tbsp Chinese Cooking Wine, 1stalk Scallion
Instructions
1. Soak 0.5 lb of glass noodles with room temperature water for 20 minutes. Make sure everything is below the liquid level.
2. Peel and finely mince 2 cloves of garlic.
3. Crush and finely mince a small piece of ginger, about the size of a teaspoon.
4. Discard the stem, take out the seeds, slice into strips, and dice 2 red chilies and 1 green chili. If you don't eat spicy food, you can switch to red and green bell pepper.
5. Take out the glass noodles and drain the water. Use scissors to give a few rough cuts if the noodles are too long to prevent them from tangling together while cooking.
6. Add about 2 tablespoons of cooking oil to the wok. Turn the heat to low. Throw in the minced garlic, ginger, 1 tablespoon of Sichuan Dou Ban Jiang (fermented broad beans in chili oil), and 1 tablespoon of oyster sauce. Stir everything on low heat for about a minute or two until the oil has a bright orange color.
7. Turn the heat to high and add 7 oz of ground pork. Cook this until the raw pink meat color is gone. You should see a little bit of pork fat rendered out from the meat.
8. Turn the heat back to low. Add the glass noodles, 1.5 tablespoons of soy sauce, and 2.5 tablespoons of Chinese cooking wine. These liquid seasonings will create some steam, which will cook the noodles really fast. In about a couple of minutes, all the noodles should be pliable and transparent, meaning they are cooked through.
9. Add the diced green and red chilies. Keep cooking. If you find out that the noodles are still sticking to the bottom of the wok, you can always add a splash of water to loosen up the noodles.
10. Turn off the heat. Add some diced scallion before serving. Mix and you're done.
