2sticks Cinnamon sticks, 3pods Star anise, 1tsp Coriander seeds, 0.5tsp White peppercorns, 0.5tsp Cloves, 3stems Cilantro stems, 50g Palm sugar, 1L Unsalted pork or chicken stock, 4tbsp Soy sauce, 2tbsp Golden Mountain Sauce, 1tbsp Oyster sauce, 1tbsp Black soy sauce, 3cloves Crushed garlic, 0.5tsp Ground white pepper, 0.5tsp Salt, 500g Pork belly, 6eggs Hard-boiled eggs
Instructions
1. Toast cinnamon sticks, star anise, coriander seeds, white peppercorns, and cloves over medium heat until aromatic and slightly darkened. Place them in a spice bag along with cilantro stems (or roots if available).
2. Caramelize palm sugar in a pot over medium-high heat (or Instant Pot on saute mode, high). Stir continuously until it darkens to an intense caramel color.
3. Carefully add unsalted pork or chicken stock to the caramelized sugar. The sugar will harden but will dissolve as it heats. Add soy sauce, Golden Mountain sauce, oyster sauce, black soy sauce, crushed garlic, and ground white pepper. Stir well.
4. Add the spice bag to the pot. Bring the mixture to a boil.
5. If using an Instant Pot, transfer the liquid to the Instant Pot. Add the remaining stock and a pinch of salt. If cooking stovetop, add all stock and salt to the pot.
6. Cut pork belly into large chunks. Add the pork belly to the pot.
7. For Instant Pot: Cook on high pressure for 20 minutes, then allow natural release for at least 15 minutes before quick releasing any remaining pressure. For stovetop: Simmer for about 2 to 2.5 hours, or until pork is fork-tender. (Note: Stovetop will require more stock due to evaporation).
8. While the pork is cooking, boil eggs for 8 minutes to achieve a slightly undercooked yolk. Once the pork is done and pressure released, add the boiled eggs to the stew.
9. For Instant Pot: Simmer the stew with eggs on saute mode for about 8 minutes. For stovetop: Simmer for at least 8 minutes, or longer for deeper egg flavor and color.
