Loaded Potato Mini Donuts

6slices Bacon, 2cups All-purpose flour, 2teaspoons Baking powder, 1teaspoon Salt, 1teaspoon Garlic powder, 1teaspoon Onion powder, 0.5teaspoon Black pepper, 0.5teaspoon Baking soda, 0.5cup Cheddar cheese, 2tablespoons Chives, 0.5cup Unsalted butter, 1to_taste Egg, 1cup Mashed potatoes, 0.5cup Buttermilk, 4cups Canola oil, 0.25cup Sour cream
Instructions
1. Add bacon to a large skillet over medium heat. Add a little water to the skillet to help render the fat slowly and evenly, ensuring the bacon cooks through before it crisps up perfectly.
2. Cook until crispy, then remove from heat and chop into small pieces. Set aside about 2 tablespoons for garnishing.
3. In a large bowl, combine flour, baking powder, salt, garlic powder, onion powder, black pepper, and baking soda. Mix until evenly combined.
4. Add most of the chopped bacon (saving about 2 tablespoons for garnish), half of the cheddar cheese, and chives to the dry ingredients. Fold everything together with a spatula and set aside.
5. In another bowl, cream the butter until light and fluffy, about 1-2 minutes. It should look like a cloud.
6. Add the egg and mashed potatoes to the creamed butter and mix until combined. Mashed potatoes make the dough extra tender and soft, like a potato bread.
7. Add half of the dry ingredients to the wet mixture and mix until mostly incorporated. Pour in the buttermilk and mix again.
8. Add the remaining dry ingredients and finish mixing with a spatula until just combined. Be careful not to overwork the dough.
9. Turn the dough onto a lightly floured surface. Knead for 1-2 minutes, adding a little extra flour if the dough feels sticky.
10. Roll the dough out to a 1/2-inch thickness. Use small round cookie cutters to cut out the donut shapes.
11. Use a piping tip to punch out the centers of the donuts, creating mini donut holes.
12. Place the donuts and donut holes on a baking sheet and refrigerate for 10-15 minutes to chill, which helps them hold their shape when frying.
13. Heat canola oil in a large skillet to 350°F (175°C). This temperature is ideal for crispy outsides and fluffy insides.
14. Working in batches, fry the donuts for about 2 minutes per side until deep golden brown. Also fry the donut holes for a great snack.
15. Transfer the fried donuts and donut holes from the hot oil to a wire rack to cool.
16. To finish, drizzle with sour cream, cheddar cheese, crispy bacon bits, and chives.
