Buffalo Chicken Wings (Level 1)

2lbs chicken wings, 1tbsp kosher salt, 0.5tsp baking soda, 1cup Frank's Red Hot, 1tbsp worcestershire sauce, 1tbsp white distilled vinegar, 1tbsp cornstarch, 1tbsp water, 1clove garlic, 0.5cup unsalted butter, 3quarts vegetable oil for frying
Instructions
1. Segment whole chicken wings into drums and flats if needed.
2. Toss the wings with kosher salt and baking soda, then place on a wire rack over a baking sheet and refrigerate.
3. Whisk Frank's Red Hot, worcestershire sauce, and white distilled vinegar in a pot and bring to a light simmer.
4. Make a cornstarch slurry and add a little at a time to the simmering sauce until slightly thickened, then cut the heat.
5. Whisk in minced garlic and cold cubed unsalted butter a little bit at a time until fully emulsified.
6. Fry the cured wings in vegetable oil at 350 Fahrenheit until golden brown and crispy.
7. Toss the fried wings thoroughly in the buffalo sauce and serve.
