Salmon Steak

Ingredients
400g salmon, 1ea lemon, 3ea garlic, 30g butter, 5g dill, 1pinch salt, 1pinch pepper, 1tbsp olive oil, 1tbsp cooking oil, 1tbsp white wine, 0.5tbsp honey
Instructions
1. Clean the lemon properly and grate the lemon zest. Mince the garlic finely.
2. Scrape the scales off the salmon from the tail to the head using the back of a knife at a 45-degree angle, then rinse and wipe the water off completely.
3. Season the salmon with salt and pepper, and cut it into steak-sized pieces if needed.
4. Heat a mixture of cooking oil and olive oil in a pan on high heat, then lower to medium when the oil is fluid.
5. Place the salmon skin-side down in the pan. Press down on each piece for about ten seconds to prevent the skin from shrinking.
6. Cover with a lid to cook the inside, and pan-fry on medium heat for about 5 to 6 minutes until the skin is crispy and separates naturally.
7. Flip the salmon and cook the top side for about 1 to 2 minutes, then remove the salmon from the pan.
8. In the remaining oil from the salmon, stir-fry the minced garlic and lemon zest on low heat so they don't burn.
9. Add lemon juice, a pinch of salt, butter, white wine, a bit of dill, and honey to the pan. Simmer and reduce to form a lemon butter sauce.
10. Plate the salmon steak and pour the freshly made lemon butter sauce over it.
