Lebanese style Bulgur Pilaf

2tablespoons extra virgin olive oil, 1finely chopped onion, 0.25cup tomato paste, 1finely chopped vine ripe tomato, 0.25finely chopped green pepper, 1.5cups fine bulgur wheat, 1teaspoon ground cumin, 1teaspoon salt, 0.5teaspoon pepper, 1can chickpeas, 1.5cups water, 0.25cup parsley, 0.25cup green olives
Instructions
1. Cook the finely chopped onion in olive oil until translucent and soft, about 5 minutes.
2. Add tomato paste, chopped tomatoes, and green peppers to the pan. Mix until fragrant.
3. Add fine bulgur wheat, salt, pepper, and cumin to the mixture. Mix well until the bulgur is coated in the tomato paste and turns red.
4. Stir in the chickpeas. If desired, you can add other vegetables like green beans, kidney beans, or zucchini at this stage.
5. Add water to the mixture, give it a good mix, then turn off the heat and cover with a tight-fitting lid. Let it rest for 10 minutes to allow the bulgur to fluff up and absorb the water.
6. After 10 minutes, remove the lid and use a fork to fluff the bulgur pilaf.
7. Serve the pilaf. It can be enjoyed on its own, as a side dish, or with pita and olive oil. For extra flavor, drizzle with olive oil, add fresh onions, parsley, and green olives.
