Apple Cobbler

Ingredients
4lbs apples, 2tbsp lemon juice, 0.33cup light brown sugar, 1tbsp cornstarch, 0.5tsp cinnamon, 0.25tsp nutmeg, 1tsp vanilla extract, 0.25cup butter, 2cups all-purpose flour, 0.5cup granulated sugar, 1tsp salt, 1tbsp baking powder, 0.75cup whole milk, 0.25cup melted unsalted butter, 1적당량 cinnamon sugar
Instructions
1. Preheat your oven to 350°F (175°C).
2. Peel, core, and slice 4 lbs of apples (Honeycrisp, Granny Smith, Cortland, or Macintosh are recommended; avoid Gala, Fuji, or Red Delicious). Slice them fairly thin, less than 1/4 inch, and transfer to a large bowl.
3. Toss the sliced apples with 2 tablespoons of lemon juice to add a zing and prevent browning.
4. Add 1/3 cup (73g) of light brown sugar to the apples, crumbling any lumps. This adds caramel flavor and sweetness.
5. Sprinkle in 1 tablespoon of cornstarch to help thicken the filling and prevent it from being too runny.
6. Add 1/2 teaspoon of cinnamon and 1/4 teaspoon of nutmeg (optional, if you don't like nutmeg).
7. Stir in 1 teaspoon of vanilla extract.
8. Give the apple mixture a good toss with a spatula until everything is nicely mixed.
9. Pour the apple mixture into a 9x13 inch baking dish. Use your hands to spread it into a flat surface.
10. Dot the surface of the apples with 1/4 cup (56g) of cold butter. This will bake into the apples for a rich mouthfeel.
11. In a large bowl, combine 2 cups (240g) of all-purpose flour, 1/2 cup (100g) of granulated sugar, 1 teaspoon of salt, and 1 tablespoon of baking powder for the topping.
12. Whisk the dry ingredients together until well combined.
13. Add 3/4 cup (180ml) of whole milk and 1/4 cup (56g) of melted unsalted butter to the dry mixture.
14. Mix with a spatula until the topping just comes together.
15. Using two spoons, scatter the topping over the apples in the baking dish. Don't worry if it doesn't cover everything, as it will melt and fluff up in the oven.
16. Optionally, sprinkle some cinnamon sugar on top of the cobbler before baking.
17. Bake in the preheated oven at 350°F (175°C) for about 45 minutes, or until the topping is golden and the filling is bubbling around the edges.
18. Allow the cobbler to cool for 10 minutes before serving. Serve with ice cream if desired.
