Pad Macaroni

100ml Ketchup, 30ml Sriracha hot sauce, 15ml Golden Mountain sauce, 5g Sugar, 1g White pepper, 300g Macaroni (tube pasta), 200g Shrimp, 30ml Oil, 10g Butter, 10g Garlic, 50g Carrots, 50g Onions, 3개 Eggs, 100g Tomatoes, 20g Green onions
Instructions
1. Prepare the sauce by combining ketchup, sriracha hot sauce, Golden Mountain sauce, sugar, and white pepper. Adjust sriracha for desired spiciness. If making for kids, use less or no sriracha. If ketchup is very sweet, hold off on adding sugar until tasting later.
2. Boil water for pasta and add salt. Drop the macaroni (or any tube pasta) into the boiling water just before you are ready to start cooking in the wok. Cook according to package directions until al dente.
3. Cook the protein separately. For shrimp, cook until nicely browned. If using chicken, marinate it in some soy sauce first for flavor.
4. Add a little oil and butter to the wok. Keep the heat low as the pan is hot. Add minced garlic and let it toast in the butter until the butter starts to brown.
5. Add carrots and onions to the wok. Cook for about one minute if you like them crunchy, or longer if you prefer them soft.
6. Add three eggs to the wok. Break the yolks but do not scramble them completely yet. Let them set partway to create nice big pieces and a marbled effect with the white and yolk.
7. Once the eggs are almost set, toss them with the vegetables. Turn off the heat temporarily if the pasta is not ready yet.
8. Drain the cooked pasta. If using short tube pasta, shake the colander vigorously to remove any trapped salty water inside the tubes.
9. Turn the heat back on. Add the drained pasta to the wok with the vegetables and eggs. Pour in the prepared sauce.
10. Toss everything together until the pasta is thoroughly coated with the sauce. Taste and adjust for sugar or other seasonings if needed.
11. Add chopped tomatoes and the cooked shrimp (or other protein) to the wok. Toss quickly to combine.
12. Turn off the heat. Toss in green onions for freshness. Serve immediately.
