Minute Steak and Egg with Red Hot Butter Sauce

6oz top sirloin, 1pinch salt, 1pinch black pepper, 2teaspoons breadcrumbs, 3tablespoons clarified butter, 1piece egg, 2tablespoons Louisiana hot sauce, 1pinch chives
Instructions
1. Pound the sirloin steak between plastic wrap until about 1/4-inch thick.
2. Season both sides with salt, black pepper, and fine breadcrumbs, pounding lightly to adhere.
3. Heat a pan over high heat with clarified butter until smoking, then sear the steak for about 1-1.5 minutes per side.
4. Remove steak to a warm plate and let the pan cool slightly.
5. Melt more butter in the pan on medium heat and fry the egg, breaking the membrane to center the yolk.
6. Place the fried egg on top of the steak.
7. In the hot pan, swirl butter and hot sauce with a splash of water to make the sauce, then spoon over the steak and egg. Garnish with chives.
