Curried Chickpeas and Roti

500g All-purpose flour, 5g Baking powder, 10g Kosher salt, 5g Instant yeast, ml Water, 30ml Olive oil, 400g Chickpeas, 1ea Sweet potato, 0.5ea Sweet onion, 3ea Garlic, 1ea Ginger, 3줄기 Scallion, 30g Jamaican curry powder, 10g Dark brown sugar, 2g Black pepper, 3줄기 Thyme, 1ea Scotch bonnet pepper, 15ml White vinegar, 500ml Vegetable broth, 200ml Coconut milk, 50g Plant-based butter, 20ml Sunflower oil
Instructions
1. Combine all-purpose flour, baking powder, kosher salt, and instant yeast in a bowl. Stir well.
2. Slowly add water to the center of the flour mixture and knead with hands until a soft, supple dough forms.
3. Lightly brush the bowl and the dough with olive oil, cover with a tea towel, and let rest at room temperature for 15 to 20 minutes.
4. Chop scallion, garlic, ginger, sweet onion, and sweet potato.
5. Heat olive oil in a pot over medium heat, add chopped onion and Jamaican curry powder, and fry until fragrant.
6. Add garlic, scallion, chickpeas, kosher salt, dark brown sugar, black pepper, thyme, scotch bonnet pepper, ginger, white vinegar, and vegetable broth.
7. Add sweet potato cubes, cover with a lid, and simmer until sweet potatoes are fork-tender.
8. Divide the rested roti dough into five sections, roll each into a thin circle, brush with melted plant-based butter, cut a slit, roll into a cone shape, tuck the ends, and let rest.
9. Pour coconut milk into the curry, stir, remove the scotch bonnet pepper, thyme, and ginger, and turn off the heat.
10. Roll out the rested roti dough pieces again into thin flatbreads.
11. Heat a tawa or griddle, brush with sunflower oil, and cook the roti, flipping every 30 seconds until browned on both sides.
12. Remove the cooked roti from the heat and clap it vigorously between your hands to separate the flaky layers.
13. Plate the curried chickpeas alongside the flaky roti, garnish with chopped scallion, and serve.
