Instructions
1. Combine 1 tablespoon of light mayo, 1 tablespoon of yellow mustard, and 2 tablespoons of Sriracha in a bowl. Add a pinch of salt and fresh cracked black pepper to taste. Whisk until homogeneous to create the burger sauce. This amount should make enough for four servings.
2. For the pickles, find small ones and slice them lengthwise, keeping them a little under 1/4 inch thick. This ensures even coverage on the burger.
3. For the onion, cut off the top and make a small incision from the skin to the bottom. Peel off the first layer. Slice the onion as thinly as possible, ideally using a mandolin, ensuring the rings maintain their shape. Rinse the sliced onions lightly in cold water, optionally with ice, to reduce pungency and enhance crunchiness.
4. Take 1.5 lbs of 96% lean ground beef. Measure out 3 oz portions of beef and roll them into balls. This will yield eight individual patties. Each burger will use two patties, totaling 6 oz of meat.
5. Place the Dave's Killer Bread buns, already halved, on a griddle or flat top over medium heat. Toast them for about 2 minutes until crusty. Toast both the top and bottom halves of the bun. Alternatively, use a toaster.
