Jitto's-Style Steak Bombs

Instructions
1. Slice the onion into 1/4-inch-thick pieces, following its striations.
2. Stem and seed the red bell pepper, then slice it thinly, about 1/4-inch thick.
3. Stem the white button mushrooms, then halve and slice them thin. Place them in the same bowl as the peppers.
4. Thinly slice 1 1/2 ounces of Genoa salami.
5. Trim any connective tissue or excess fat from 1 pound of sirloin steak tips (flap meat). Cut the steak into 3/4-inch pieces.
6. Heat 2 tablespoons of vegetable oil in a 12-inch nonstick skillet over medium-high heat until it shimmers. Add the sliced onions and cook for about 4 minutes until they begin to brown.
7. Add the red bell peppers and mushrooms to the skillet with the onions. Season with 1 teaspoon of Lawry's seasoning salt. Cook for about 6 minutes until the vegetables are softened.
8. Transfer the cooked vegetables to a bowl.
9. Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius) with the oven rack in the middle position. Spread 1 1/2 tablespoons of mayonnaise on the interior of each of the four split sub rolls.
10. Place the sub rolls in the preheated oven and cook for about 5 minutes until they turn golden-brown.
11. Heat 1 teaspoon of vegetable oil in the same skillet until just smoking. Add the steak in a single layer and cook for about 5 minutes to medium, without stirring, to achieve good browning. Sprinkle with 1 more teaspoon of Lawry's seasoning salt.
12. Sprinkle the sliced salami over the steak.
13. Remove the skillet from the heat. Add the cooked vegetables back to the skillet with the steak and salami, and stir everything together.
14. Evenly fill the toasted sub rolls with the steak and vegetable mixture. Place two slices of deli American cheese overtop each sandwich.
15. Return the sandwiches to the 400-degree Fahrenheit (200 degrees Celsius) oven for just 1 minute until the cheese is melted.
