Sticky Toffee Pudding

Ingredients
450g Medjool dates, 4개 Earl Grey tea bags, 300ml boiling water, 1teaspoon cinnamon, 0.5개 nutmeg, 170g butter, 170g golden caster sugar, 170g muscovado sugar, 4개 eggs, 340g self-raising flour, 250g butter (for sauce), 250g sugar (for sauce), 50ml rum, 300ml double cream, 1pinch salt
Instructions
1. Remove stones and caps from 450g of dates.
2. Cover four Earl Grey tea bags with 300ml of boiling water and steep for 3 and a half minutes.
3. Add the de-stoned dates to a blender with a level teaspoon of cinnamon and half a grated nutmeg. Pour the steeped Earl Grey tea over the dates and let them sit for 10 minutes with a lid on.
4. Cream together 170g of butter, 170g of golden caster sugar, and 170g of muscovado sugar until light and fluffy.
5. Beat in four eggs, one at a time, until fully incorporated.
6. Gently fold 340g of self-raising flour into the mixture.
7. Blend the tea-soaked dates until smooth, then pour the date mixture into the batter and fold it in.
8. Butter and flour a ring-shaped bun tin or baking dish to prevent sticking.
9. Pour the mixture into the prepared mold.
10. Bake in the oven at 180°C for 45 to 50 minutes.
11. While the pudding bakes, make the sauce: melt 250g of butter and 250g of sugar (half golden, half muscovado) in a pan.
12. Once the sugar starts to dissolve, add 50ml of rum. Carefully flambé the rum by angling the pan towards a flame to burn off the alcohol and enhance flavors.
13. Add 300ml of double cream to the sauce and stir until it becomes a lovely shiny, caramelly sauce.
14. Once small bubbles appear in the sauce, turn off the heat.
15. Once the pudding is baked, paint a thin layer of the sauce over the top to seal it and create a crispy toffee crust.
16. Pour additional caramel sauce into the center of the pudding.
17. Sprinkle a little salt on top of the pudding for a salted caramel effect.
18. Portion and serve the ultimate sticky toffee pudding.
