Veggie Casserole

1whole butternut squash, 2tbsp olive oil, 1pinch salt, 400g mushrooms, 4whole onions, 4whole peppers, 1pinch black pepper, 2tbsp tapenade, 2whole garlic cloves, 2tbsp red wine vinegar, 2tins tinned whole plum tomatoes, 1jar/tin chickpeas (jarred or tinned)
Instructions
1. Preheat oven to 180°C (350°F). Carefully cut the butternut squash in half, remove seeds, drizzle with a little olive oil and salt. Place skin side down directly onto oven bars to roast.
2. Break up 400g of mushrooms and add them dry to a pan. Cook for 10 minutes to dehydrate and concentrate their flavor.
3. Peel and roughly chop 4 onions. Prepare 4 peppers by removing seeds and tearing them into chunky, 2-inch pieces. Add onions and peppers to the pan with the mushrooms. Season with salt and pepper. Cook for another 10 minutes, allowing them to char and steam.
4. Peel and finely slice 2 garlic cloves. Add 2 tablespoons of olive oil and the sliced garlic to the pan. Then add 2 tablespoons of tapenade and 2 tablespoons of red wine vinegar. Cook until the vinegar has cooked away.
5. Add two tins of whole plum tomatoes to the pan. Scrunch the tomatoes with clean hands. Fill the empty tomato tins with water and add to the pan to clean the tins and provide moisture for the casserole.
6. Add chickpeas (jarred or tinned, with their juice) to the pan. Bring the mixture to a boil, then stir and season lightly with salt and pepper, remembering it will reduce.
7. Remove the roasted squash from the oven. Place the squash on top of the stew in the pan, pushing it down slightly. Return the pan to the oven and cook at 180°C (350°F) for about 1.5 hours, or until everything is cooked through and gorgeous.
8. Once cooked, remove from the oven. Use a spoon to break up the squash into large hunks and stir it into the casserole. Taste and adjust seasoning with salt and pepper. Add a 'thimble of vinegar' for a lighter, tangier flavor.
