Caramelized Onions

500g onions, 100ml water, 1g baking soda
Instructions
1. Slice the onions pole to pole instead of crosswise. Cutting them this way keeps their vascular bundles more intact, so the onions don't break down too much.
2. Start by simmering the sliced onions in a pan with water and cover. This surrounds the onion with steam, which helps them soften and shed their juices more quickly and thoroughly than dry heat does.
3. Stir and press the onions into the bottom and sides of the skillet as they cook. This maximizes contact between the onions and the hot pan so that browning can occur. It also helps them cook evenly. Do this every 30 seconds until the onions are well browned, soft, and slightly sticky. It should take about 15 to 20 minutes.
4. Finish them with a baking soda slurry. Its alkalinity softens them even more by breaking down pectin.
