Holographic Cookie

113g Butter, 50g Sugar, 50g Powdered Sugar, 1개 Egg White, 5ml Vanilla Extract, 2ml Peppermint Extract, 30g Cocoa Powder, 120g Flour, 2g Salt, 200g Chocolate Chips, 50g White Chocolate, 1방울 Pink Food Coloring, 1개 Edible Unicorn Decoration
Instructions
1. Add butter, sugar, and powdered sugar to a mixer and cream until smooth.
2. Add egg white, vanilla, and peppermint extract, then mix again.
3. In another bowl, add cocoa, flour, and salt, then sift them together.
4. Combine the wet and dry ingredients and mix until a soft chocolate dough forms.
5. Dust parchment paper with cocoa powder, place the dough on top, and dust with more cocoa powder.
6. Roll the dough until it's about 1/8 inch thick.
7. Dip a cookie cutter in cocoa powder to prevent sticking, then cut six perfect rectangles from the dough.
8. Freeze the cut cookies for 30 minutes, then bake straight from frozen for 10 minutes at 350°F (175°C).
9. Cut the diffraction sheet into rectangles and place them holographic side up into a silicone mold.
10. Melt chocolate chips in a double boiler, then add peppermint extract and mix.
11. Pour melted chocolate into the molds, place a baked cookie on top, and cover with more chocolate.
12. Tap the mold to release air bubbles and let the chocolate set.
13. Once set, carefully remove the chocolate from the mold and peel off the diffraction sheet.
14. Decorate the top of the chocolate card by piping a white text box and a pink border.
15. Add an edible unicorn decoration as the character for the trading card.
16. Place the finished holographic cookie trading card into a cute bag for presentation.
