Korean Inspired Juicy Lucy Burger

2tablespoons Brown Sugar, 1tablespoon Rice Wine Vinegar, 1tablespoon Fish Sauce, 1tablespoon Soy Sauce, 1pinch Toasted Sesame Oil, 1tablespoon Minced Garlic, 1tablespoon Minced Ginger, 1large spoon Gochujang Paste, 400g Ground Beef (Brisket, Short Rib, Chuck), 1pinch Salt, 1pinch Pepper, 1tablespoon Canola Oil, 3slices Mozzarella, sliced, 1bowl Carrots, finely sliced, 1bowl Cabbage, shredded, 1bowl Kimchi, drained, 1bunch Scallions, sliced, 1teaspoon Toasted Sesame Seeds, 1bowl Mayonnaise, 2pieces Bun, 2knobs Butter
Instructions
1. Combine brown sugar, rice wine vinegar, fish sauce, soy sauce, toasted sesame oil, minced garlic, minced ginger, and gochujang paste in a saucepan. Bring to a boil, then reduce to a simmer until thickened.
2. Season the ground beef with salt and pepper. Divide the meat into two equal portions. Form each portion into a ball, then flatten into a patty using a burger press or by hand.
3. Take three slices of mozzarella, fold them into a ball, and place them in the center of one patty. Place the second patty on top and seal the edges to create a stuffed burger.
4. Heat canola oil in a hot pan. Place the stuffed burger in the pan and lightly press it down with a burger press. Cook for 3 minutes per side for medium-rare, turning only once.
5. While the burger cooks, prepare the slaw. Combine finely sliced carrots, shredded cabbage, drained kimchi, and sliced scallions in a bowl. Season lightly with salt, pepper, and toasted sesame seeds.
6. Mix mayonnaise with 3-4 tablespoons of the prepared sauce to create the dressing for the slaw. Add the dressing to the slaw ingredients and mix until just combined.
7. Remove the cooked burger from the pan and let it rest on a wire rack. Pour the caramelized butter from the pan over the resting burger.
8. Add a little fresh butter to the pan and let it froth. Lightly season the burger buns with salt and pepper, then toast them in the pan, mopping up the flavors.
9. Spread the prepared slaw on the base of the toasted bun. Add a little touch of the sauce in the center of the slaw. Place the rested burger on top of the slaw.
10. Add another touch of sauce on top of the burger, then place the top bun to complete the burger. Cut the burger in half to reveal the juicy interior.
