Baklava

1pound box phyllo dough, 0.75cup clarified butter or ghee, 1.5cup granulated sugar, 0.75cup water, 1tablespoon lemon juice, 1tablespoon rose water, 3cups walnuts
Instructions
1. To make the simple syrup, combine 1 cup of granulated sugar, 3/4 cup of water, and 1 tablespoon of lemon juice in a saucepan. Bring the mixture to a boil, then simmer for 5 to 7 minutes until all the sugar is dissolved and it's smooth. Once dissolved, add 1 tablespoon of rose water (or orange blossom water). Let it cool for about 30 minutes, then refrigerate until cold.
2. Process 3 cups of walnuts with 1/2 cup of granulated sugar in a food processor for 15 to 20 seconds until finely chopped.
3. Melt 3/4 cup of clarified butter (ghee) in the microwave for 30 seconds to 1 minute until liquid.
4. Lightly butter the bottom of a 9x14 inch baking pan with some of the melted ghee.
5. Carefully open the 1 pound box of phyllo dough. Measure and cut the phyllo sheets to fit the baking dish. It's recommended to cut it lengthwise as well for a better fit.
6. Place about 26 sheets (slightly more than half) of the phyllo dough in the bottom of the baking dish.
7. Spread the crushed walnuts and sugar mixture evenly over the phyllo layers.
8. Layer the remaining phyllo sheets (about 16) on top of the walnut mixture.
9. Using a super sharp knife, cut the baklava into diamond shapes. Make 9 diagonal cuts and 4 horizontal cuts, pressing firmly all the way down to the bottom of the pan to cut through all layers.
10. Pour the remaining melted clarified butter evenly over the cut baklava. Tilt the pan to ensure all corners are buttery. Let it set for 5 minutes.
11. Bake in a preheated oven at 350°F (175°C) for 50 to 60 minutes, or until the top is golden and flaky.
12. Immediately after removing from the oven, pour the cold simple syrup over the hot baklava. Let it set for at least an hour (preferably two hours) before serving.
