Candied Salmon Dip

8ounces hot smoked salmon, 2큰술 brown sugar, 1큰술 maple syrup, 1큰술 ketchup, 2큰술 vinegar, 1squeeze sriracha, 1꼬집 cayenne pepper, 16ounces cream cheese, 0.25cup fresh dill, 2큰술 capers, 2개 green onions, 1개 lemon zest
Instructions
1. Break up the 8 ounces of hot smoked salmon, peeling it off the skin. Crumble it into a bowl in pretty big pieces, paying attention to remove any bones.
2. In a saucepan, combine brown sugar, maple syrup, 1 tablespoon of ketchup, 2 tablespoons of vinegar, a generous squeeze of sriracha, and a few shakes of cayenne pepper. Place on the stove over medium heat.
3. Bring the syrup mixture to a simmer, then stir well. Let it cook for a couple of minutes until it reduces and thickens slightly. Turn off the heat and let it cool.
4. In a separate bowl, combine room temperature cream cheese, freshly chopped dill, drained and roughly chopped capers, finely sliced green onions, and the zest of one lemon. Mix thoroughly until combined.
5. Transfer the cream cheese mixture into a shallow casserole dish and spread it out as evenly as possible. Choose a dish where the ingredients will come up close to the top for the best appearance.
6. Pour the cooled syrup over the crumbled salmon and mix thoroughly with a spoon. This will further break up the salmon into smaller pieces.
7. Spread the salmon mixture evenly over the cream cheese base in the casserole dish. Be gentle and avoid pressing or smashing it down.
8. Place a piece of plastic wrap over the salmon layer and gently press it down with your hands to create a smooth surface. This prevents small salmon pieces from burning during broiling.
9. Place the dish under a broiler set on high, about seven to eight inches below the heat. Broil until the top is nicely browned and beautifully caramelized, almost starting to char in a few spots.
10. Let the dip sit at room temperature or chill it before serving. Garnish with more sliced green onions for added color and flavor.
