2lbs chicken wings, 2yolks egg yolks, 2tbsp Dijon mustard, 1tbsp corn syrup, 2lemons lemons, 8cloves garlic, 1.5tsp fresh thyme leaves, 1cup Parmigiano Reggiano, 1cup neutral oil, 1shallot shallot, 1chili red Fresno chili, 1tbsp fresh rosemary, 2tbsp fresh parsley, 2cups all-purpose flour, 4eggs eggs, 0.5tsp onion powder, 2tbsp tomato paste, 3cups panko breadcrumbs, 3quarts vegetable oil for frying
Instructions
1. Blend egg yolks, Dijon mustard, corn syrup, lemon juice, garlic, thyme, and Parmigiano Reggiano until smooth, then slowly stream in neutral oil to emulsify.
2. Mix finely chopped shallot, red Fresno chili, rosemary, parsley, salt, and pepper into the creamy garlic parm sauce.
3. Set up a three-tier breading station: all-purpose flour, whisked eggs mixed with water, onion powder, tomato paste, and salt, and panko breadcrumbs.
4. Dredge cured wings in flour, dip in the tomato-egg wash, and coat thoroughly with panko breadcrumbs.
5. First fry the breaded wings in 325 Fahrenheit oil for about 5 minutes until fully cooked, then remove.
6. Increase oil temperature to 350 Fahrenheit and double fry the wings for 1 to 3 minutes until deep golden brown and extra crispy.
7. Toss the crispy breaded wings in the garlic parm sauce, plate, and garnish with more parmesan and chives.
