Instructions
1. To make roasted garlic butter: Cut a head of garlic in half along the equator. Oil it inside and out, then wrap it tightly in foil. Roast in an oven or air fryer until the cloves are soft, sweet, and golden (approx. 30 minutes). Let cool.
2. Soften butter: Leave a couple of sticks of butter on the counter for a few hours, or microwave them for 10 seconds, rotate, and microwave for another 10 seconds max until soft but not melted.
3. Chop a handful of parsley finely.
4. Once cooled, squeeze the roasted garlic cloves out of their skins into a bowl with the softened butter and chopped parsley.
5. Season the butter with salt, pepper, and a few juniper berries (if using). Whip the butter for a long time to incorporate air, then refrigerate for flavors to mature.
6. Prepare the vegetables: French and cut half a red onion into wedges, slicing longitudinally. Cut shishito peppers in half. Cut a large yellow heirloom tomato into big chunks.
7. Heat olive oil in a pan until it starts to smoke. Add the red onions first and cook for about a minute until they start to soften.
8. Add the shishito peppers to the pan. Cook on full blast heat, adding more oil if needed, until they soften and get some browning on the edges (about 2 minutes). Season with salt and pepper.
9. Add the tomato chunks to the pan. Cook for about a minute, just to get them hot and their juices starting to run. Season with salt and pepper.
10. Turn off the heat. Add a big spoonful of the prepared roasted garlic butter to the pan and gently melt it, allowing it to emulsify with the tomato juice to create a thick, delicious sauce.
11. Adjust seasoning to taste. Garnish with fresh parsley if desired. Serve immediately, enjoying the accumulating juice at the bottom of the bowl.
