Pfeffernósse "Pepper Nut" Christmas Cookies

Ingredients
3tbsp white sugar, 3tbsp brown sugar, 1tbsp honey, 2tbsp water, 1tsp cinnamon, 1tsp ground ginger, 0.5tsp cardamom, 0.5tsp nutmeg, 0.25tsp allspice, 0.25tsp clove, 0.25tsp cayenne pepper, 0.5tsp salt, 0.5tsp baking soda, 2tbsp heavy cream, 1ea egg, 1.5cup all-purpose flour
Instructions
1. Add white sugar, brown sugar, honey, a splash of water, and spices (cinnamon, ginger, cardamom, nutmeg, allspice, clove, cayenne pepper) to a saucepan.
2. Cook over medium heat, stirring until it starts to simmer and sugars dissolve.
3. Remove from heat and let sit to cool for 4-5 minutes.
4. Add salt, baking soda, heavy cream, and one beaten egg to the mixture. Whisk thoroughly.
5. Add all-purpose flour and stir with a wooden spoon until cookie dough forms.
6. Transfer dough onto plastic wrap, wrap tightly, and chill in the fridge for 1 to 2 days.
7. Portion dough into small balls (about a rounded teaspoon each) and place on a parchment-lined baking sheet.
8. Roll each portion between your palms to make them smooth.
9. Bake at 375 degrees F for 9-10 minutes.
10. Let cookies cool completely on the pan.
11. Dip each cooled cookie into powdered sugar icing, let drip, flip, and place on a wire rack.
