Curry Udon

Ingredients
300g all purpose flour, 135ml water, 1tablespoon salt, 10g potato starch, 50g green onions, 300ml curry sauce, 50g Fukujinzuke pickles
Instructions
1. Combine water and salt, mix until salt is completely dissolved (around 2-3 minutes).
2. In a large bowl, add water a little at a time to the flour and mix with your hands until evenly distributed. Break up any large lumps.
3. Lay down plastic bags, place the dough in the center, flatten it, and fold the plastic bag over. Step on the dough for approximately 200 steps (3-5 minutes), trying to keep it in a round shape.
4. Open the plastic, fold the edges of the dough in towards the center, cover, and step on it for another 200 steps. Repeat this process one more time.
5. Gather the dough, tuck it inside to shape it into a ball, cover with plastic or cloth, and let it rest for 2 hours.
6. Sprinkle potato starch on your work surface. Using a rolling pin, roll the dough outwards and from all directions, trying to shape it into a square. Roll to approximately 3-4 mm (1/16 to 1/8 inch) in thickness.
7. Fold the rolled dough to make it easier to cut. Transfer to your work surface and start cutting it from the edge using a kitchen knife.
8. Chop the green onions and set aside for later.
9. Boil a large pot of water. Gently put the udon noodles in and boil for about 10 minutes.
10. Drain the noodles in a colander and wash them in clean water. Drain excess water and transfer to a bowl.
11. Pour the curry sauce over the noodles, then add the chopped green onions on top. Serve with Fukujinzuke pickles.
