Pho Poutine

Ingredients
1큰술 oil, 0.5개 chopped onion, 2쪽 chopped garlic, 1꼬집 salt, 500ml pho broth, 1개 cinnamon stick, 0.5작은술 whole cloves, 1조각 ginger, 50g unsalted butter, 50g all-purpose flour, 1큰술 fish sauce, 1큰술 hoisin sauce, 0.5작은술 ground white pepper, 0.5개 lime, 150g cheese curds, 2개 potatoes, 500ml peanut oil
Instructions
1. Heat a little oil in a pan. Add chopped onion and garlic, and a pinch of salt. Sauté until soft.
2. Pour in the pho broth. Add a cinnamon stick, whole cloves, and ginger. Let it simmer and reduce by about a third, which will take 15-20 minutes.
3. While the broth simmers, make the roux. Melt unsalted butter in a separate pan. Add all-purpose flour and stir until it forms a sticky paste. Continue cooking until it develops a light brown color and nutty aroma.
4. Fish out the cinnamon stick, cloves, and ginger from the broth.
5. Season the broth with fish sauce, hoisin sauce, and ground white pepper.
6. Turn off the heat on the broth. Gradually whisk in about three-quarters of the roux into the broth. Turn the heat back on and continue whisking until the gravy thickens.
7. Let the gravy simmer for five more minutes to cook off any raw flour taste. Taste and adjust seasoning as needed. Squeeze in some fresh lime juice.
8. Prepare the cheese curds by tearing larger pieces into smaller chunks for better distribution over the fries.
9. For the fries, blanch potatoes in cold salted water until fully cooked (about 10 minutes). Let them cool. Fry them in 275-degree oil for five minutes. Let them cool again.
10. For the final fry, heat oil to 350 degrees. Fry the pre-cooked potatoes until beautifully golden and crispy. Drain them on a rack.
11. Assemble the poutine: place fries in a bowl, top with cheese curds, and generously ladle hot gravy over everything.
