Ingredients: cooked rice (long-grain, e.g., jasmine), eggs, scallions, oil, minced garlic · 10 min cook time · 365kcal · ~₩3,700
Ingredients
300g cooked rice (long-grain, e.g., jasmine), 4개 eggs, 4개 scallions, 30ml oil, 1tbsp minced garlic, 1tbsp oyster sauce, 1tbsp soy sauce
Instructions
1. Crack four eggs into a bowl and beat well. Dice four scallions and divide them into two portions; one for stir-frying and the green part for garnish at the end.
2. Turn the heat to maximum. Preheat your wok thoroughly by tilting it in all directions until it starts smoking. This usually takes 30 seconds to a minute.
3. Add a generous amount of oil to the smoking wok and swirl to coat the surface, creating a non-stick layer.
4. Add half of the diced scallions and 1 tbsp of minced garlic. Stir for just a few seconds.
5. Pour in the beaten eggs and mix well with the scallions and garlic. Cook until the egg is mostly set.
6. Drizzle a little more oil around the edges of the wok. Add the cooked rice, break up any clumps, and mix well until every grain is loose and separated.
7. Season the fried rice with 1 tbsp of oyster sauce and drizzle 1 tbsp of soy sauce from the side of the wok.
8. Toss in the reserved green part of the diced scallions and mix well.
