Honey Garlic Shrimp

1pound raw peeled and deveined shrimp, 6cloves garlic, 2tablespoons honey, 1teaspoon freshly grated ginger, 1.5tablespoons soy sauce, 0.5teaspoon Asian fish sauce, 2teaspoons vegetable oil, 2stalks green onions
Instructions
1. Ensure 1 pound of raw, peeled, and deveined shrimp (16/20 count) are fully thawed, well-drained, and as dry as possible. Keep them in the fridge.
2. Prepare the marinade by mincing a bunch of garlic, adding 2 tablespoons of mild honey, a little freshly grated ginger, 1 to 2 tablespoons of soy sauce, and a small amount of Asian fish sauce. Whisk to combine.
3. Transfer the shrimp into the marinade and toss thoroughly with a spatula until every piece is covered. This may take a couple of minutes.
4. Cover the bowl with plastic wrap and refrigerate to marinate for 30 to 60 minutes. If using a bowl, occasionally toss the shrimp to ensure even marination. Do not marinate longer than 60 minutes.
5. Brush your largest non-stick skillet with a couple of teaspoons of vegetable oil and heat it over high heat until you see a small wisp of smoke.
6. Quickly transfer the shrimp into the hot skillet in a single layer, reserving any excess marinade liquid.
7. Sear the shrimp on high heat for exactly two minutes until they start to take on a beautiful brown color.
8. Flip the shrimp over, then immediately pour in the reserved excess marinade. Cook for just one minute.
9. Turn off the heat, flip the shrimp one last time, and let the residual heat in the pan reduce the marinade to a beautiful glaze.
10. Serve the honey garlic shrimp over rice, noodles, or your preferred starchy base. Garnish with freshly sliced green onions.
