Easy Peach Cobbler

100g butter, 900g peaches, 0.25cup light brown sugar, 0.25cup granulated sugar, 1cup all-purpose flour, 0.75cup granulated sugar, 2tsp baking powder, 0.5tsp cinnamon, 1pinch allspice, 1dash nutmeg, 0.25tsp salt, 0.75cup whole milk, 1scoop ice cream
Instructions
1. Preheat your oven to 375°F (190°C).
2. Place 7 tablespoons (100g) of butter into a 9x13-inch baking dish and put it in the preheated oven for about 5 minutes, or until the butter is melted and bubbly. Set aside once melted.
3. Prepare 6 peaches (about 900g). You can slice them with the skin on, or peel them. If peeling, you can blanch them in boiling water for 30 seconds to make the skin easier to remove. Cut a shallow X on the peach before blanching if desired. Remove the pits and slice the peaches into thin slices, a little under half an inch thick.
4. Transfer the sliced peaches to a large skillet. Sprinkle over 1/4 cup (55g) of light brown sugar and 1/4 cup (50g) of granulated sugar.
5. Place the skillet over medium heat and mix until the sugar is melted and blended with the juices released from the peaches. Once the sugar is melted and the peaches have released some juice, remove from heat and set aside.
6. In a large bowl, add 1 cup (120g) of all-purpose flour, 3/4 cup (150g) of granulated sugar, 2 teaspoons of baking powder, 1/2 teaspoon of cinnamon, a pinch of allspice, a tiny dash of nutmeg, and 1/4 teaspoon of salt. Whisk to combine all the dry ingredients evenly.
7. Pour 3/4 cup of whole milk into the dry mixture. Mix until just combined, being careful not to overmix the batter.
8. Carefully retrieve the baking dish with the melted butter. Transfer the batter into the pan, trying to spread it evenly over the butter without mixing them together.
9. Transfer the peaches and their juices over the top of the batter, aiming for nice coverage but leaving some gaps for the cobbler batter to come through.
10. Bake in the preheated oven at 375°F (190°C) for 40 to 45 minutes, or until the batter is cooked through and springs back when lightly pressed.
11. Allow the cobbler to cool slightly before serving. Enjoy with a big scoop of ice cream if desired.
