Chinese street food-style fried noodle

1serving Pre-cooked noodles (youmian), 2tbsp Oil, 50g Ham, 0.25개 Onion, 0.25개 Carrot, 2stalks Baby bok choy, 0.125tsp Salt, 0.125tsp MSG, 0.125tsp Five spice powder, 0.125tsp Chicken bouillon powder, 0.125tsp Cumin powder, 1tbsp Light soy sauce, 0.5tbsp Dark soy sauce, 0.5tbsp Oyster sauce, 2cloves Minced garlic, 1개 Spicy fresh chili, 1개 Fried egg
Instructions
1. Boil your noodles until they’re al dente, then strain. After that, move them over to a large baking tray and drizzle in a couple tablespoons of oil, coating them evenly.
2. Place the oiled noodles in front of a box fan (or use a hand fan/magazine). As you're oiling and fanning, jiggle them with chopsticks or your hand to let the steam escape. Keep moving them for about 5 minutes until they cool down. Set aside.
3. Prepare your add-ins: cut ham, onion, carrot, and baby bok choy into slivers to match the noodle shape.
4. Prepare the seasoning mix: combine 1/8 tsp each of salt, MSG, five spice powder, chicken bouillon powder, and cumin powder.
5. Prepare the seasoning sauce: mix 1 tbsp light soy sauce, 1/2 tbsp dark soy sauce, and 1/2 tbsp oyster sauce. Keep both seasoning mix and sauce on the side.
6. If using a wok: Perform 'longyau' by getting the wok piping hot, shutting off the heat, adding one tbsp of oil, and swirling it quickly. Then, over a high flame, add the noodles.
7. Spread the noodles out and let them fry on one side for about 1 minute to brown. Then flip and quickly brown the other side for another minute.
8. Add the ham and mix quickly. Then add the minced garlic and spicy fresh chili. Give it another mix.
9. Add all the vegetables and mix well with a spatula and chopsticks or tongs.
10. Sprinkle in the seasoning mix and swirl the seasoning sauce onto the noodles (not directly onto the hot wok side to prevent burning).
11. Fry everything together for about another two minutes. Then turn off the heat and serve.
12. Optionally, place a fried egg on top.
13. If using a non-stick skillet: Add oil to a cool pan, turn the heat to high, and immediately go in with the noodles and spread them out.
14. Fry the noodles for about one minute until the surface dries up a bit, then flip and fry for another 30 seconds.
15. Add the ham, mix for another 30 seconds. Then add the aromatics (garlic and chili) and give it a quick mix.
16. Add the vegetables and fry everything together for another minute, or until the vegetables wilt a touch.
17. Take the skillet off the flame and toss in both the dry seasoning mix and the liquid seasoning sauce. Mix quickly.
18. Return to the flame and mix until the seasoning is well incorporated, about half a minute. Then serve.
