300g Pork, 1큰술 Cornstarch, 1큰술 Oyster sauce, 2큰술 Soy sauce, 0.5작은술 White pepper, 50ml Water, 2줄기 Green onions (green parts), 2개 Shallots, 3쪽 Garlic, 1개 Cucumber, 2큰술 Red vinegar, 1큰술 White rice vinegar, 2큰술 Hoisin sauce, 3큰술 Ground bean sauce, 2큰술 Tomato sauce, 1큰술 Sugar, 400g Noodles, 3큰술 Oil, 1큰술 Cooking wine, 2큰술 Potato starch slurry, 1작은술 Sesame oil
Instructions
1. Prep the pork by slicing it into strips and marinating it with cornstarch, oyster sauce, soy sauce, white pepper, and water.
2. Prep the vegetables: dice the green parts of green onions, dice the shallots, and then dice the garlic.
3. Cut the cucumber into sections, then cut out the watery core, and then cut into thin slices.
4. For the iconic sauce, mix together red vinegar, white rice vinegar, hoisin sauce, ground bean sauce, tomato sauce, sugar, and water.
5. Cook the noodles in boiling water until just done. Dunk them in ice water, then briefly return to hot water before taking them out.
6. Add some oil to the noodles and loosen them before placing them in a hot wok with oil.
7. First, add the pork to the wok, followed by the shallots and garlic. Stir-fry them together, then splash cooking wine to enhance the flavor.
8. Next, add the sauce to the wok, bring it to a boil, and then thicken it with a potato starch slurry.
9. Finish the sauce with some sesame oil.
10. Pour the meat sauce over the noodles and garnish with the cucumber and green onion. Then, serve.
