200g beef, 1tbsp vegetable oil, 1tsp soy sauce, 1tbsp oyster sauce, 1tsp golden mountain sauce, 1tsp fish sauce, 1tsp black soy sauce, 100g chinese broccoli, 200g wide rice noodles, 1tbsp garlic, 1egg egg, 1pinch white pepper, 1tbsp chili vinegar
Instructions
1. Oil the beef slightly with vegetable oil and season with a little soy sauce. Let it sit.
2. Mix up the sauce by combining oyster sauce, soy sauce, golden mountain sauce, fish sauce, and black soy sauce.
3. Slice the chinese broccoli into thin slices, cutting the leaves larger.
4. Prepare the wide rice noodles by cutting them from a large sheet if necessary, and keep them in the fridge.
5. Cook the protein separately in a hot pan, then remove it.
6. Wipe the pan clean, add oil, chopped garlic, and then add the egg, breaking the yolk and scrambling.
7. Add the chinese broccoli and toss to coat in oil.
8. Add the noodles and half of the sauce mixture, tossing vigorously to coat and split up the noodles.
9. Add back the cooked beef without its extra liquid, toss everything together, and finish with white pepper and chili vinegar.
