9pieces (7x5cm) Rubing (Yunnan cheese) / Paneer / Halloumi, 120g Pork, 0.125tsp Salt, 0.25tsp Sugar, 0.125tsp Cornstarch, 0.25tsp Five spice powder, 0.5tsp Soy sauce, 0.5tsp Shaoxing wine, 9slices Yunnan ham / Prosciutto, 25g Cornstarch, 2pieces Egg whites, 0.25cup Oil (lard/schmaltz preferred), 9leaves Cilantro
Instructions
1. Cut the cheese (Rubing, Paneer, or Halloumi) into nine 7 by 5 centimeter-ish rectangles and set aside.
2. Thinly slice 120 grams of pork into nine similarly sized pieces, each about 4 mm thick.
3. Marinate the pork with an eighth teaspoon salt, a quarter teaspoon sugar, eighth teaspoon cornstarch, quarter teaspoon five spice powder, and a half teaspoon each soy sauce and Shaoxing wine. Mix well and set aside for at least 20 minutes.
4. If using Yunnan ham, blanch it in simmering water for about one minute, then remove, rinse, and soak until needed. Prosciutto can be used directly from the package.
5. Prepare the egg white slurry by mixing 25 grams of cornstarch with two egg whites. Mix very well and patiently until no clumps remain.
6. Take about a quarter of the egg white slurry mixture and pour it over the marinated pork, mixing well.
7. Dip each cheese rectangle into the remaining egg white slurry mix to coat, then lay them on a big plate and dust each with a small bit of dry cornstarch.
8. Layer the marinated pork over the cheese, hit it with another bit of dry starch, and then toss on a final layer of the egg slurry.
9. Press a ham slice (Yunnan or Prosciutto) onto each assembled package.
10. To a wok or pan, add about a quarter cup of oil (lard or schmaltz preferred) over a medium flame.
11. Lay the cheese potstickers in the hot oil and slowly fry for about eight minutes, or until they just begin to get golden. Adjust the wok periodically to cook evenly.
12. Flip the potstickers and fry for another two minutes or so on the ham side. If any cheese sides are still light, flip them again and quickly correct for about a minute.
13. Remove the potstickers from the pan and place them onto a plate. Optionally, garnish with a single wetted leaf of cilantro over each one.
