Ingredients
400g egg noodles, 150g Chinese broccoli, 1개 carrots, 1개 long red pepper, 100g Chinese sausages (lap cheong), 2큰술 oyster sauce, 1큰술 fish sauce, 2큰술 soy sauce (Filipino brand, e.g., Silver Swan), 0.5작은술 black pepper, 2큰술 oil, 200g shrimp, 0.5개 onions, 3쪽 garlic, 1개 calamansi (or lime and orange juice)
Instructions
1. Prepare the sauce by mixing oyster sauce, fish sauce, soy sauce, and black pepper in a bowl.
2. Boil egg noodles in plain boiling water. Cook for about 1 minute for fresh noodles, or according to package directions for your specific brand.
3. Remove noodles from boiling water and immediately dunk them in cold water to stop cooking and wash off starch. Drain right away.
4. In a wok, add a little oil and then add sliced Chinese sausages (lap cheong). Render the fat from the sausages until they start to blister.
5. Remove the cooked sausages from the wok and set aside.
6. Add shrimp to the same wok with the flavored oil. Sear for about 30 seconds per side until firm and curled up.
7. Remove shrimp from the wok and set aside.
8. Add sliced onions and minced garlic to the wok. Sauté until the garlic starts to brown slightly around the edges.
9. Add sliced Chinese broccoli, julienned carrots, and sliced long red pepper to the wok. Stir-fry until vegetables are slightly wilted.
10. Add a small amount of the prepared sauce to the vegetables to season them.
11. Add the cooked noodles to the wok. Pour the remaining sauce over the noodles.
12. Toss everything together, ensuring the noodles are well coated and absorb the liquid. Use scissors to snip the noodles a few times for easier eating.
13. Return the cooked shrimp and Chinese sausages to the wok. If there are any juices from the shrimp, pour them in for extra flavor.
14. Toss everything one last time to combine. Serve immediately.
