Fish and Chips

Instructions
1. Peel and cut 2 lb of Yukon Golds.
2. Boil the cut Yukon Golds in heavily salted water for 8 to 12 minutes. Let them cool to room temperature for about 30 minutes.
3. Slice the white fish across the grain into individual fillets.
4. For the batter, combine 1 and 1/2 cups of all-purpose flour, 1 tsp baking powder, 1/2 tsp paprika, and 1/4 tsp cayenne pepper.
5. Add 1 and 1/2 to 2 cups of light lager to the flour, baking powder, and spice mixture.
6. Generously coat your fish in the dredge and then dunk it in the batter.
7. Heat 2 qt of neutral flavored oil (like peanut, vegetable, or canola) to 375° F.
8. Fry the battered fish for 5 to 8 minutes, depending on the thickness of your fish.
9. Fry the cooled potato chips at a slightly lower 350° F for 2 to 4 minutes. Immediately salt them upon exit.
10. Plate the fish and chips with tartar sauce and lemon wedges.
