Blackberry Cobbler

Ingredients
1.5cups self rising flour, 1cup granulated sugar, 1cup whole milk, 2tsp vanilla extract, 0.5cup melted, unsalted butter, 3cups fresh or frozen blackberries, 0.5cup granulated sugar, as needed butter, to serve vanilla ice cream
Instructions
1. Preheat your oven to 350°F (175°C).
2. In a large bowl, combine 1 1/2 cups (180 grams) of self-rising flour and 1 cup (200 grams) of granulated sugar. Whisk to combine.
3. Stir in 1 cup (240 mL) of whole milk, 2 tsp of vanilla extract, and 1/2 cup (113 grams) of melted, unsalted butter until just combined. Do not overmix.
4. In a separate large bowl, combine 3 cups (510 grams) of fresh or frozen (not thawed) blackberries with 1/2 cup (100 grams) of granulated sugar. Mix gently.
5. Lightly butter an 8x8 inch baking dish.
6. Pour the batter into the prepared baking dish.
7. Scatter the sugared blackberries over the batter. Any extra sugar can be sprinkled on top for a crackly finish.
8. Bake for 1 hour at 350°F (175°C), or until golden and bubbly.
9. Serve warm with a big scoop of vanilla ice cream.
